How far back you can scroll is set by camera count, resolution and disk, so it is sized around the answer you want.
Disks arranged so the archive survives one failing, and remote viewing set up so any camera comes up on your phone.

Do these need a subscription to keep working?
No. UniFi devices are managed from a console you own, with no per-device licence required to keep them running.
Do you supply the hardware as well as install it?
Yes - equipment and installation are quoted together as one job.
